The wiki doesn't say how to get the 2nd watching quest complete. I went back to Gemma, Eiron and Propelio after the 1st watching. It's been some time since and nothing for the 2nd watching has popped up.

(Looking around.) Did you receive Watchings at Eiron's Home (Renaissance Mountains) and Amzinas Gardens (Giant Plains)?

I just did this today. Gemma should've also had 2 quests for you to get the locations for Eiron and Amzina's garden (near the Den area, more to the right if I remember correctly). You have to go to Amzina's garden and perform an exploration task (20 explore and 20 forest) to finish the task.
